Cheese butterflies

It’s another birthday party so trying another appetiser today

Ingredients

4oz plain flour
2oz butter
2oz grated cheddar
Splash water or little beaten egg
4oz cream cheese
A little milk
Finely chopped parsley or paprika pepper

First make the cheese pastry by rubbing the butter into the flour with a pinch of salt. Then stir in the cheese and enough water or egg till it comes together. Knead lightly then roll out thin. Cut out rounds with a 1 inch cutter, cut half the rounds into two. Bake at 200 for 10-15 minutes until lightly golden. Mix the cream cheese to a piping consistency, using a little milk if necessary. Using a large star nozzle, pipe a large star on each biscuit, set 2 half biscuits in the cheese to form the wings and decorate with parsley or paprika.

I think this is such a brilliant and effective idea. So easy to make and looks pretty impressive if I may say so myself! I didn’t use any milk with the cream cheese, piped on fine just gently beaten. There are so many ways you could adapt these; use a flavoured cheese, add paprika or cayenne to the dough, or even colour the dough to make them really look like butterflies for a girls party! I didn’t have a 1 inch cutter so think mine were a little bit bigger than meant to be, still tasted pretty good, but probably would’ve been better as little bite size appetisers.

Would I make again? Most definitely!
