So tonight we are having roast chicken with veg. I’m always looking for new ideas to jazz up vegetables, here’s one of tonight’s accompaniments
1 small white cabbage, washed and shredded
0.5pint white sauce
Cook the cabbage in boiling salted water for 10-15 minutes, drain well and put in a greased ovenproof dish. Make the white sauce with half milk and half liquor from the cabbage. Add the grated cheese, reserving 1 tablespoon. Heat gently until the cheese is melted and beat until smooth. Pour the sauce over the cabbage, stir lightly together, sprinkle over the remaining cheese and brown towards the top of the oven or under the grill.
I halved these quantities and was a good enough amount as a side for 2 adults and a child. The white sauce is basically butter, flour and the liquid cooked until thick.
This was pretty damn tasty! It’s kind of like cauliflower cheese but with cabbage! I find cabbage pretty dull, the last few times I’ve bought cabbage has been to make coleslaw so it’s good to have a new recipe for cooked cabbage. My daughter loved this as well so is a good one for kids!
