Butterscotch Sauce

Fancied something really sweet after dinner so to avoid being tempted by any chocolate decided to make this to pour over ice cream!


1oz butter
1oz brown sugar
1 tbsps golden syrup
1oz nuts chopped
A squeeze of lemon juice (optional)

Warm the butter, sugar and syrup until well blended. Boil for 1 minute and stir in the nuts and lemon juice.

I don’t think it matters what kind of nut you use, I used walnuts. I only had walnuts and pistachios in the cupboard and thought the walnuts were more suited to this. I opted to put in the lemon, only a few drops.

We had this warm with ice cream. As soon as it was cooked I poured it over some vanilla ice cream. As it hits the cold ice cream it starts to harden slightly and turns into a glorious sticky sauce! It reminded slightly of the chocolate sauce we used to have as kids, the stuff that hardens when it hits the ice cream! It creates a wonderfully sticky, sweet sauce but with a nice crunch from the nuts. I couldn’t really taste any lemon juice so would try a splash more next time.

Apparently this should make enough sauce for four. Well this was only just enough for the two of us, let’s just say I could’ve quite happily eaten the entire lot! Is brilliant with ice cream but also think it would be really nice with an apple pie.

Would I make this again? Definitely
