Fried Pork and Vegetables

I had pork, vegetables, a tin of bamboo shoots and wanted something quick and simple for tea so picked this recipe..

First off I made the sauce which is a new one for me..

I was using pork tenderloin, so that was cut into cubes then first put into the tomato sauce..

Then I mixed the beaten egg with the soy sauce and sherry, which seemed like an unusual combo, and then the pork was transferred into that and it’s starting to seem like a bit of effort for a simple sounding recipe!!

So then I put the meat onto cook and the egg bits of it start to cook first which all just looks a bit weird!

It says to cook the pork for 2 minutes but I left it cooking for a bit longer, it just seemed to cook really slowly.

While that was cooking I chopped the veg and used an extra orange pepper. I can only find canned bamboo shoots so that’s what I used!

What did throw me is the red pepper that’s mentioned, is that a red pepper as in the vegetable or as in red chilli pepper?? I had to assume it’s the latter as it seems odd to be adding a red vegetable pepper at a different time to the green pepper!

I removed the pork once it looked a bit more cooked..

Then I started cooking the veg..

After another few minutes I returned the pork..

I did add a very slight sprinkling of chilli powder as I decided that was what the recipe means!! Then I added the remaining sauce and a dash of sherry and allowed to cook for a couple minutes, then was served on some boiled rice..

So this was dinner for the three of us and it was nice! Just nice, not brilliant! I did end up having to add a dash more soy sauce to mine and that made it better for me! The pork was nice and soft and everything is cooked nicely, I just think the sauce needed more flavour. Overall was fine and we all had clean plates

Would I make this again? Not sure, bit of a faff with the sauces really!
