Calcutta Beef Curry

We do like having some sort of slow cooked dish on a Sunday, and I like the sound of this slow cooked curry..

The coconut milk tip is not something I had ever heard of!! So now I know I can dissolve desiccated coconut in water in the event I can’t find coconut milk!

I did a quick search for this recipe and did come across a few that had pretty much similar ingredients, although fresh chillies and fresh ginger did feature.

The smell and colours of the spices together is good..

Then I mixed all that with some of the coconut milk..

Once the onion and garlic had been cooking for a few minutes I added the paste..

Then after another few minutes the meat was added..

So the recipe says the stock should be added at the same time as the meat and there is no real browning stage, so that’s what I did!

An hour does not seem long enough at all to cook the meat, I think I ended up leaving this to simmer for nearer 2 hours! I had expected the liquid to all simmer away, but there’s still a decent amount after all that time..

So then the coconut milk, lemon juice and salt is added and it kind of totally ruins the look of it, there’s now way too much liquid! So I served this just with some boiled rice and chose not to serve any of the weird fruit accompaniments that the book suggests!

Our plates were drowning in sauce and there was still loads left in the pan, so it’s just as well it tastes so good!! The sauce truly is delicious, the flavour from all the spices and the coconut milk is great. The meat is lovely and soft and the three of us loved this. I have loads of sauce left so tomorrow I am going to make a version of this with prawns!

Would I make this again? Yes, loved it..

Rich Beef Casserole

It was soo cold and miserable yesterday and that totally put me in the mood for some kind of slow cooked beef dish. I picked this one as I had all the ingredients in the cupboard…

I probably would’ve expected a few more ingredients for a rich casserole..

..but then I suppose that makes this an appealing recipe, few ingredients for hopefully a rich tasty casserole!

Really quick to get this in the oven, first off the onion and peppers are fried and transferred to the casserole dish..

Then the beef is browned..

Finally the wine, tomato paste and some seasoning is added and then that’s all added to the casserole dish..

So that’s it! It’s shoved in the oven and left for a good couple of hours. Normally I don’t pay too much attention to the timings of dishes like this, but considering there really isn’t much liquid I did check on this now and again, and after an hour it was looking dry so I did add a splash of water.

I think in total I gave this just over two hours. So the recipe says to add a packet of frozen sweetcorn in the last 10 minutes, but the packet I have is huge! So I added about a mug full and put back in for the last few minutes..

After then it’s smelling good and looking rather inviting!

So as a casserole goes this is good, it’s not as rich as I imagined it would be, but all three of us really enjoyed it.

Would I make this again? Yes, easy and made with pretty basic ingredients..

Pork Ragout

I made an egg ragout last week and was probably one of the most awful looking things I have made! It actually tasted quite nice, but am hoping this ragout recipe is going to be better..

The list of ingredients do read more like the what you’d expect in a ragout..meat, garlic, red wine..

First off I fried the onions..

Then I added the pork, which I got the butcher to bone and cube for me..

It is quite fatty so I did cut off a few extra overly fat bits. Then I had this cooking for 10 minutes before adding the onion, garlic and pepper..

Then I added the chilli, celery salt, wine and stock. I like using celery salt and often add that to soups. I think it has a really interetsing flavour. So once all that’s added it doesn’t look terribly exciting..

While that was simmering away I started with the rice, so if I had halved everything else I had planned to half the rice amount but 1.5oz of rice is hardly any and to half that would just seem pointless, so I opted to keep the full amount..

I was going to make my own stuffing but then I found a packet of stuffing mix for only 27p, and I was only using half so technically is only 13.5p of stuffing!

Once I’d added boiling water and left to thicken, I then shaped into balls..

I think I had the pork simmering for about the full hour and a half and by then it was looking a bit more appealing..

Then I added the cooked rice..

Then the fried stuffing balls..

So this was dinner for the three of us and we all enjoyed it! The pork is lovely and soft and the flavour from the sauce is just great! I don’t think my daughter particularly loved the stuffing balls as they are quite strongly flavoured with sage, but I think it all went together really well..

Would I make this again? Yes, is really delicious..

Steak Diane

Felt like treating ourselves to some fillet steak tonight, and this recipe caught my eye, but I thought steak Diane was a more creamy style sauce…

I try buy our meat from our local butcher but sometimes when time doesn’t permit I do buy from the supermarket..

I had picked two big steaks which I thought would be enough for the three of us.

So these were simply fried in some oil and butter. I know the recipe only says 1-2 minutes each side but considering these were quite large steaks and I’m not sure the others in my house like their steak rare I decided to cook bit longer.

After probably 5 minutes on each side they still felt quite tender..

So pretty much all the other references to steak Diane included cream or brandy or mushrooms, or a combination of both. I do really like Wocestershire sauce so the sound of this sauce does appeal to me.

It’s really not very much onion or parsley..

I followed the instructions and it’s really not much sauce..

So then what’s left of the sauce is spooned over the steak..

Well this is great! I love this version of steak Diane and would quite happily challenge any other version!! The steak is obviously the star of the show but the lemony, worcestshire sauce is pretty damn good!

Would I make this again? Yes!

Beef Roll

I had mince and was originally going to make meatballs for dinner but then I remembered about this recipe, doesn’t sound very exciting but I suppose it’s something different to make with mince!

I’m never sure what the recipe means by fat bacon, is it just regular bacon or the fat from bacon? I just used regular back bacon and rather than mince I just cut up with scissors.

I used 4 smallish potatoes and perhaps didn’t dice them small enough..

The only chutney I have in the fridge is an apple and rhubarb chutney, so that had to do!
I think the best way to mix this is just to get your hands in..

It is ridiculously soft and I couldn’t keep in a sausage shape with my hands, so had to use the greaseproof paper to actually shape it..

Then I wrapped in tinfoil..

After an hour in the oven it’s hard to really tell if it’s ready so I just trusted the recipe.

Well I know I’ve made some dodgy looking food from this book but this really is terrible looking! When I unwrapped the paper the whole thing just fell apart and looks awful!!

I was not able to slice it, I had to just spoon it onto plates..

I had some homemade tomato sauce in the freezer so I just defrosted some of that and poured it over, but it really doesn’t make it look any better..

If you take away the fact that it looks nothing like a roll it’s actually quite nice! I suppose it’s all a meal on it own! I can really taste the rhubarb chutney and I think that actually works in it. Even my daughter loved this and was giving it a thumbs up!

Would I make this again? Probably not, it did taste nice but just a bit messy and weird!

Liver Casserole

I’ve had varying success with any liver recipe. I’ve tried ragout of liver, and Mexican liver and neither really appealed to me. Then I did make simple liver and onions. And I did actually quite like that, I think the reason was I didn’t overcook the liver. So considering the liver in this recipe was getting fried and then baked I was thinking I was going to end up with tough, unappetising chunks of liver…

I had bought half a pound of liver from the butcher for pennies! It really is a cheap cut of meat, just a shame it doesn’t taste better!!

So I started by frying the bacon, onion and liver altogether..

It says to fry until just brown which I tried to do but when it’s browned in places yet still bleeding in other I just felt I needed to give it longer. I think I had this frying for over 5 minutes..

Still not loving the look of this! It’s into the casserole with the tomatoes and Wocestershire sauce..

After half an hour I checked the liver and it felt pretty tough so I removed from the oven. The sauce had thickened slightly..

I decided to serve this with some mashed potatoes..

Well the sauce is nice!! The liver is pretty awful!! It’s just soooo overcooked! I had made this for all three of us and even my 7 year daughter had a go at the liver. She had a few bites and told me it tasted like poo, but then actually carried on trying more just to make sure. I don’t think she hated as much the more she tried it! I didn’t like the liver much at all, it was ok when I cut it into tiny bits and mixed with the bacon and onion but the big chunks of it were really hard to eat!

Would I make this again? Nope!!

Curry Beef Burgers

I quite like the sound of this, was in the mood for a Friday night burger! Then you read the ingredients and realise it involves a can of corned beef!! I don’t know what it is about meat in cans but it’s really off putting! I actually don’t mind slices of corned beef but seeing in a can makes it look utterly revoltingly! I have made the corned beef casserole from this book and didn’t love it, so was now not too sure about this.

First off I think I need to apologise for the terrible photos, it’s hard to make canned meat look good!

I had a 200g can of corned beef so halved everything else. While the potatoes were boiling I fried the onions, well instead of half an onion I used two shallots. Then I added the curry powder..

While that was cooking I removed the corned beef from the can and cut into chunks. It’s so not very appetising when it comes out of the can, I had to chop off all the horrible fatty bits then cut up into chunks..

Even adding the curried onions didn’t make it look much better..

Then I added the mashed potato..

Then I mixed it altogether and left to cool. Looks a bit like stovies at this point!

I really think it’s essential to let the mixture cool. My daughter was having her dinner earlier so I made her a couple of mini burgers while the mix was still warm and they practically disintegrated in the pan! I managed to re-shape them but were not photo worthy! Despite all that she loved them!

Once the mix had properly cooled I shaped and started to fry..

Even after the cooling period they do not keep their shape very well at all. They are sooo soft. It is quite hard to turn them without breaking them..

So after about 5 minutes on each side I decided they had been fried enough. Technically there’s not anything to cook so once they were getting browned I decided that was long enough. So I was attempting to go healthyish and opted to make carrot fries, plus I did not think these burgers needed a bun due to the high potato content..

Well these taste way way way better than they look! There are really soft but I thought that was ok. The flavour is quite nice too and I liked the heat from the curry powder. I know this isn’t really the kind of burger we think about these days but back at the time of this book maybe a canned meat burger was the only option!

Would I make this again? Yes I would, looks really bad but actually tastes good…
