I think I must’ve consumed an entire days calorie allowance last night when we had the fondue, do you get cheese hangovers?? So today I though I’d try to be healthy…
Ingredients
12 tomatoes quartered
1 small onion
1 small stick of celery or a pinch of celery salt
3 sprigs parsley
4 tbsps water
A squeeze of lemon juice
A dash of Worcestershire sauce
Salt and pepper
Put the tomatoes, onion, celery, parsley and water into a blender and blend until smooth. Add the lemon juice and Worcestershire sauce with seasoning to taste. Strain then chill before serving.
It doesn’t say to skin the tomatoes so I threw the whole things into the blender. Other tomato recipes have been quite specific about skinning so I had to assume this was correct. I was making this just for me so I quartered it. This is so simple to make and surely must cover most of my 5 a day?
I used raw celery, but I do also have celery salt so next time I might try with that as I do love my celery salt and the flavour it adds to things.
After straining it does look quite thick, more like a smoothie. I left it in the fridge for about an hour before I tried it, by then it was even thicker and definitely couldn’t just drink out the glass. I ended up using a spoon.
This tasted much better than I expected! I’m not a fan of tomato juice at all and was worried about the raw onion totally overtaking the whole flavour. I honestly quite enjoyed this. It’s not massively strong with tomatoeyness, you can get all the other flavours; hint of heat from the Worcestershire and a nice bitter touch from the lemon.
It almost feels more like a gazpacho; I do have that to make at some point and I was sort if putting that off as I didn’t fancy it at all, but this had changed my mind.
Overall this was way tastier than I expected, although it’s more a mousse like texture than a cocktail, but I don’t mind that. I now feel super healthy, also got some chocolates to finish though…

I love this. I used to think I didn’t like tomato juice and then I tried it with some seasoning and spices in and I was converted immediately.
I thought the exact same thing, I would definetly try more tomato based drinks now!
